Green Dragon Chocolate Cake

1 cup Almond Flour
1 cup Gluten Free Flour
½ cup Honey
3T Unsweetened Cocoa
1 tsp Soda
6 tbs Oil
1 mashed ripe Banana
1 tbs Vinegar
1 tsp Vanilla
¼ cup Cacao Nibs

Preheat oven to 350 degrees. Make 1 cup of concentrated Green Dragon tea – 1 ½ tsp of tea steeped for 5 min in water brought up to a boil, but not boiled.
Sift the dry ingredients together in a ungreased 9” square pan: flour, cocoa, soda

Make 3 depressions, distribute the wet ingredients between the three areas: honey, oil, banana, vanilla then vinegar.

Pour the tea over all of the mixture.
Using a slotted pancake turner, mix the ingredients by scraping and turning the turner over. Be sure to get into the corners too.
Sprinkle the Cacao Nibs across the top of the cake before putting it into the oven.

Bake for 30 – 35 minutes. Cool on cake rack.
Serves 10.

Great with ice cream (orange), yogurt, or whip cream to top.
